Yay! I'm so happy that you have a fridge/freezer stuffed with tasty food that you can actually eat. By the way, when you're in the kitchen doing that endless chopping...you should be playing your favorite upbeat music really, really loudly!

The new pressure cookers are wonderful, and considerably less scary than my grandmother's. They are truly much safer.I have one by Kuhn Rikon. I started to comment and say that root vegetables (carrots, small turnips, parsnips) are great coated with a little olive oil, salt /pepper and roasted in a 400 oven. They do caramelize. Mmmmm

YUMMMMMMM!
Oh that sounds so good on a cool fall day! Parsnips are one of my favorites too. I love them slow cooked in a skillet until they almost caramelize. My Grandpa Miller introduced me to another olde tyme plant, Salsify, which he called Oyster plant. Looks quite a bit like parsnips, yummy too :-}

Hmm... I have ginger and sweet potatoes and onions, and some chicken or pork in the freezer. Maybe I'll make some of that Sengalese Mafe tomorrow.
I cook a lot for us too, Its less expensive, its easier ot control the healthy content and Oscar really appreciates my cooking. He brags about me at work when he brings my dishes for supper/lunch *blush*
I had a bad pressure cooker experience in my 20s.. maybe its time to try again?
